I have celiac disease, which means that I will be very, very sick if I consume gluten - even a small crumb. I have to avoid gluten in anything that I eat. This is medical necessity, not a lifestyle choice.
What I can't eat. Gluten is in wheat, bread, stroopwaffels, barley, rye as well as in soy sauce. It is also found in some of the following, usually because flour has been added: marinades, spices, bouillon cubes, and processed products such as mayonnaise or salad dressings. Soups that are prepared with a flour (roux) base will also make me sick. The same applies to meatballs or gravy and other dishes that have been thickened using flour.
I will also be sick while eating that is fried in contaminated oil or cooked in the same water, for example: when fries or chips are fried in the same oil as something with gluten (like croquettes). It may sound extreme, but if something is prepared on the same surface or in the same pan that was used to cook gluten, it will make me sick if the pan was not cleaned well first.
Things I can eat: I can eat products from corn and corn flour, lentils, quinoa, rice and rice flour, chickpeas, tapioca, cassava, potatoes, meat, chicken, vegetables, fresh fruit, cheese, eggs and fish - as long as these are not cooked or baked together with the ingredients from the first paragraph.
Can you tell me what I can eat safely from your menu, or that you can prepare me with a safe cooking surface? For a pizza this also means that the pizza must be baked on a separate baking tray or in a separate pan.
Thank you for your help in making sure I eat safely! I apologize for any inconvenience you may experience from this, but I have to be very careful what I eat.
