I have celiac disease, which means that I will get very sick if I eat gluten. Gluten is found in wheat, bread, barley, rye, oats, as well as soy sauce. Soups made with a bread (roux) base or thickened with any flour are off limits. So are meatballs, sausages, or gravies and other dishes thickened with wheat flour flour, as well as pies, dips with breadcrumbs or flour, and dishes with phyllo dough.
Unfortunately, this diet isn’t a lifestyle choice. I will become very ill if I eat food containing those ingredients. The disease also affects me if I eat food that is fried in contaminated oil, like French fries in the same oil as breaded items.
Can you please tell me what can I eat safely in your menu?
Things I can eat. I can eat food containing corn and corn flour, lentils, quinoa, milk, rice and rice flour, chickpeas, tapioca, cassava, potatoes, meat, chicken, vegetables, fresh fruit, cheese, eggs, honey, or fish/seafood – so long as they are not cooked with the ingredients in the first paragraph
