I have celiac disease, which means that I cannot eat gluten, or I will get very sick. Gluten is found in wheat, barley, rye, as well as soy sauce and some seasonings. This includes wheat noodles (my), egg noodles (nui), hoisin sauce, Maggi, Knorr seasoning, and banh mi.
I also cannot eat ingredients that are fried in the same oil used to fry unsafe foods. In those cases, the cross-contamination will also make me sick, as well as traces of wheat from a previous meal on the wok, or even a small amount of soy sauce in sauces or soups.
Can you please let me know what is safe for me to eat? Or, can you possibly make your dishes or soup without using any soy sauce, hoisin sauce, Maggi or Knorr seasoning, and use rice noodles, mung bean noodles or tapioca noodles?
Things I can eat: I can safely eat food containing rice or sticky rice (com or xoi) or rice noodles (pho or bun), tapioca flour or tapioca noodles (mien or banh canh), cassava and rice noodles (banh da cua), mi quang, corn (bap), vegetables, fruit, yoghurt, eggs, meat, chicken or fish – so long as they are not cooked with wheat flour, soy sauce or seasonings. I can also eat mung bean noodles (hu tieu), fresh spring rolls (goi cuon), rice flour dishes like banh cuon, desserts like che chuoi and other che dishes, cha gio made from banh trung rice paper, fish sauce and nuoc cham, and much more.
