I use Lakanto (a monk fruit & erythritol based sweetener) to sweeten my recipes, as well as fresh fruit in some recipes! You are free to use whatever sweetener you would prefer but I have only tested the recipes in this book with Lakanto. I use Lakanto in my recipes because it is a non-GMO, zero calorie sweetener that can be subbed 1:1 with regular sugar & in my experience bakes really well! It also doesn’t have unnecessary added ingredients as it only contains erythritol & monk fruit extract.
