The Little Cookbook of Gluten-free Waffles is dedicated to those who have had to change their diets due to autoimmune conditions, food allergies, or intolerance to certain foods. My name is Dora Siah, and I am the creator of Provincial Paleo. I embarked on the Paleo Autoimmune Protocol (AIP) to reverse my hyperthyroid autoimmune condition and wanted to create fond memories of lazy Sunday brunches featuring fun foods such as waffles for my children, one of whom has an egg allergy, so this cookbook was written.
