This presentation will describe the process of conducting a qualitative research study and highlight results from a study that explored the perceived barriers to healthy eating among those experiencing food insecurity and relying on food pantries as supplemental food sources. Overall, the study participants greatly desired to consume healthy foods; however, they felt limited by a lack of nutrition or cooking knowledge, adequate resources, special dietary needs, and culture and family influences. The discussion of these research findings will inform attendees of some essential elements for the development of future nutrition education programs and for promoting health in low-income communities.
